Cajun Chicken Pasta

Ingredients

  • 3 chicken breasts, cut into bite sized pieces
  • 2 Tbsp olive oil
  • 1/2 yellow onion, diced
  • 5 tsp minced garlic
  • 750 ml chicken stock
  • 200 ml heavy whipping cream
  • 1 can crushed or diced tomatoes
  • 1 box (1 pound) penne pasta
  • Combine in small bowl
    • 1 1/2 tsp onion powder
    • 1 1/2 tsp garlic powder
    • 1 1/2 tsp oregano
    • 1 1/2 tsp thyme
    • 1/2 tsp chili powder
    • 2 Tbsp smoked paprika

Cooking Instructions

  • Place diced chicken breast into mixing bowl
  • Mix spices in small bowl and stir together to combine
  • Pour spice mix onto chicken and mix together so all chicken is covered.
  • Heat 2 Tbsp of olive oil in a deep pan.
  • Add diced onions to pan and cook on medium high heat for about 3 minutes, stirring occasionally to prevent burning.
  • Add 5 tsps minced garlic and cook another minute.
  • Add chicken and cook until chicken is cooked, about 6 minutes. Stir chicken occasionally as it cooks.
  • Add 750ml chicken stock and 200ml heavy whipping cream and stir together.
  • Add crushed tomatoes and stir.
  • Add a little salt and pepper.
  • Bring to a boil.
  • Stir in box of penne pasta. Mix pasta and cover the pasta in the liquid.
  • Reduce heat to a high simmer.
  • Cook for about 15 minutes or until pasta is done. Stir occasionally while it is cooking.
