Ingredients
- 3 chicken breasts, cut into bite sized pieces
- 2 Tbsp olive oil
- 1/2 yellow onion, diced
- 5 tsp minced garlic
- 750 ml chicken stock
- 200 ml heavy whipping cream
- 1 can crushed or diced tomatoes
- 1 box (1 pound) penne pasta
- Combine in small bowl
- 1 1/2 tsp onion powder
- 1 1/2 tsp garlic powder
- 1 1/2 tsp oregano
- 1 1/2 tsp thyme
- 1/2 tsp chili powder
- 2 Tbsp smoked paprika
Cooking Instructions
- Place diced chicken breast into mixing bowl
- Mix spices in small bowl and stir together to combine
- Pour spice mix onto chicken and mix together so all chicken is covered.
- Heat 2 Tbsp of olive oil in a deep pan.
- Add diced onions to pan and cook on medium high heat for about 3 minutes, stirring occasionally to prevent burning.
- Add 5 tsps minced garlic and cook another minute.
- Add chicken and cook until chicken is cooked, about 6 minutes. Stir chicken occasionally as it cooks.
- Add 750ml chicken stock and 200ml heavy whipping cream and stir together.
- Add crushed tomatoes and stir.
- Add a little salt and pepper.
- Bring to a boil.
- Stir in box of penne pasta. Mix pasta and cover the pasta in the liquid.
- Reduce heat to a high simmer.
- Cook for about 15 minutes or until pasta is done. Stir occasionally while it is cooking.
