Ingredients
- 1 pound ground beef
- 1 – 8 ounce container of cream cheese
- 1 packet of taco seasoning
- 1 cup of salsa
- 1 can red enchilada sauce
- 1 can of black beans
- 1 cup of frozen corn
- 3 large tortillas
- 1 packet of shredded cheese (fiesta, mexican, cheddar jack, or similar)
Cooking Instructions
Set cream cheese out while preparing and cooking the ground beef so it softens a bit.
Turn oven on to 350°
- Cook ground beef in pan and chop up
- When thoroughly cooked, stir in 1 packet of taco seasoning and 1 cup of salsa. Stir in 1 cup of frozen corn.
- Turn off the burner for the ground beef.
- Spray the bottom and sides of a glass baking dish with cooking spray.
- Pour a little enchilada sauce on the bottom of the dish so it covers the bottom.
- Spread 1/2 of the cream cheese on a large tortilla. Put the tortilla, cream cheese side up, on the bottom of the baking dish.
- Place a layer of black beans on the tortilla.
- Spread about half of the ground beef on top of the black beans.
- Sprinkle 1/2 cup of cheese on top of the ground beef.
- Pour 1/4 cup enchilada sauce on top.
- Spread the other half of the cream cheese on a tortilla. Place the tortilla on top to start another layer.
- Add black beans, the other half of the ground beef, 1/2 cup of cheese, and 1/4 cup enchilada sauce like you did for the first layer.
- Place a tortilla on top. Pour enchilada sauce on top of the tortilla so it covers the tortilla.
- Sprinkle cheese over the top. You can use as much cheese as you would like.
- Put the dish into the oven and cook until cheese is melted (about 30 minutes).
