Ingredients
- 1 pound ground beef
- 2 Tbps olive oil
- 1/2 onion, diced
- 1 Tbsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp minced garlic
- 2 Tbsp ketchup
- 1 cup corn (You can add other frozen vegetables like peas, carrots, or green beans.)
- Mashed potatoes (premade or make your own)
- Shredded cheese (cheddar, cheddar jack, or similar)
Cooking Instructions
Preheat oven to 350°
- Add 2 Tbsp olive oil to heated skillet.
- Add the diced onions and cook for 3 minutes, stirring occasionally.
- Add the ground beef and break it apart into small pieces.
- Add 1 Tbsp Italian seasoning, 1/2 tsp salt, 1/2 tsp pepper.
- Stir well and cook until ground beef is done.
- Add in ketchup and stir.
- Add in corn and stir.
- Pour the meat into a baking dish.
- If using pre-cooked mashed potatoes, follow package instructions for cooking.
- If making homemade mashed potatoes, follow recipe under “Side Dishes”.
- Spread mashed potatoes on top of the meat.
- Sprinkle shredded cheese on top of mashed potatoes. You can use as much cheese as you want.
- Cook dish in oven until cheese is melted (about 30 minutes).
