Cowboy Casserole

Ingredients

  • 1 1/2 pounds ground beef
  • 1 medium onion, diced
  • 1 can whole kernel corn
  • 1 can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 30 ounce bag frozen tater tots
  • 1 can Rotel Original diced tomatoes and green chiles
  • *Optional – Diced jalepenos and bell peppers

Cooking Instructions

Set the tater tots on the counter for about an hour to thaw

Turn oven on to 375°

  • In a large skillet cook the onion until it gets a little soft
  • Add the beef (and bell pepper if you are using it) to the onion and cook over medium heat until the beef is fully cooked
  • Drain the grease from the beef
  • In a bowl, combine the following and mix together…
    • 1 can condensed cream of mushroom soup
    • 1/2 cup milk
    • 1/4 cup sour cream
    • 1 can Rotel
  • Pour the mixture into the meat
  • Add 1 can corn and 1 cup shredded cheddar cheese to the meat
  • Spray the bottom of a 9×13 casserole dish with cooking spray
  • Put half of the tater tots in a layer on the bottom of the dish
  • Pour the meat mixture evenly over the tater tots
  • Put the other half of the tater tots in a layer on top of the meat mixture
  • Sprinkle 1 cup shredded cheddar cheese on top of the tater tots
  • Bake for 25-30 minutes or until the top layer of tater tots are golden brown and crispy.
