Ingredients
- 1 1/2 pounds ground beef
- 1 medium onion, diced
- 1 can whole kernel corn
- 1 can condensed cream of mushroom soup
- 1/2 cup milk
- 1/4 cup sour cream
- 2 cups shredded cheddar cheese
- 1 30 ounce bag frozen tater tots
- 1 can Rotel Original diced tomatoes and green chiles
- *Optional – Diced jalepenos and bell peppers
Cooking Instructions
Set the tater tots on the counter for about an hour to thaw
Turn oven on to 375°
- In a large skillet cook the onion until it gets a little soft
- Add the beef (and bell pepper if you are using it) to the onion and cook over medium heat until the beef is fully cooked
- Drain the grease from the beef
- In a bowl, combine the following and mix together…
- 1 can condensed cream of mushroom soup
- 1/2 cup milk
- 1/4 cup sour cream
- 1 can Rotel
- Pour the mixture into the meat
- Add 1 can corn and 1 cup shredded cheddar cheese to the meat
- Spray the bottom of a 9×13 casserole dish with cooking spray
- Put half of the tater tots in a layer on the bottom of the dish
- Pour the meat mixture evenly over the tater tots
- Put the other half of the tater tots in a layer on top of the meat mixture
- Sprinkle 1 cup shredded cheddar cheese on top of the tater tots
- Bake for 25-30 minutes or until the top layer of tater tots are golden brown and crispy.
