Ingredients

2 cups cooked, shredded chicken (make yourself or use rotisserie)
½ cup sour cream (add more if you want it creamier)
1 cup shredded Monterey jack cheese (can also use pepper jack)
1 small can diced green chiles
1 can green enchilada sauce
Tortillas (flour or corn)
Heat oven to 350.
Combine:
- 2 cups shredded chicken
- ½ cup sour cream
- ¼ cup cheese
- Can of diced chiles
- ¼ cup green enchilada sauce
Mix it all together
Spray bottom and sides of baking dish with cooking spray.
Place a layer of tortillas on the bottom of the cooking dish, covering the whole bottom.
Dump chicken mixture on top of the tortillas in the dish.
Spread the chicken mixture evenly.
Place a layer of tortillas on top of the chicken mixture, covering all of it.
Pour the rest of the green chile enchilada sauce on top of the tortillas, covering all of the tortilla.
Sprinkle ¾ cup cheese evenly over the top. You can use as much cheese as you would like.
Place dish in oven and cook for about 40 minutes.
